Recipe
Ingredients in this recipe
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup plain yogurt or Greek yogurt
- 1/4 cup unsalted butter, melted and cooled
- 2 large eggs or 3 smaller ones
- 1 teaspoon of vanilla extract or a few drops of vanilla essence
- 1 and 1/2 cups frozen blueberries
Step-by-step instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk the yogurt, melted butter, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix with a spatula until well combined. Be careful not to overmix; the dough should be slightly lumpy.
- Turn on and preheat the oven to 375 °F (190 °C). Grease or line a muffin tin with paper liners, whichever you prefer.
- Gently fold in the frozen blueberries until they are evenly distributed throughout the batter.
- Pour the prepared batter into the prepared muffin cups. Fill each one about 3/4 full as it expands as it bakes.
- Bake in the preheated oven for about 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow the baked blueberry muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
