Recipe
Ingredients in this recipe
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan
- 2 cups marinara sauce
- 4 slices of mozzarella cheese
- 4 sandwich rolls, sliced and toasted
Step-by-step instructions
- Salt and pepper the rinsed and dried chicken breasts on both sides.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.
- Coat each chicken breast in flour, shake off any excess, then dip them in the beaten eggs and finally coat them evenly in the breadcrumb mixture.
- Turn on and preheat the oven to 375 °F (190 °C).
- Heat a pan over medium-high heat and add a drizzle of olive oil. Once heated, add the coated chicken breasts and cook for about 4 minutes on each side, or until nicely golden brown and crispy.
- Transfer the cooked chicken breasts to a baking sheet lined with baking paper. Pour marinara sauce over each chicken breast and top with a slice of mozzarella cheese.
- Place the tray in the preheated oven and bake for about 15 minutes, or until the chicken is cooked through and the cheese has melted and rings.
- To assemble the sandwiches, place a chicken breast on each toasted roll and top with additional marinara sauce and fresh basil leaves, if desired. Serve immediately hot.
