- 2 cups cooked and chopped chicken breasts (chicken breasts can also be grilled or roasted)
- 1 cup cherry tomatoes, cut in half
- 1 diced cucumber
- 1 bell pepper, diced (any color you prefer, or half and half for more colors)
- 1/4 red onion finely chopped
- 1/4 cup feta cheese, crumbled into small pieces (optional)
- 1/4 cup black olives, sliced or whole to your liking (optional)
- 1/4 cup fresh chopped parsley or other herbs
For the dressing
- 3 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
