- 3 mashed ripe bananas
- 1/2 cup plain Greek yogurt
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 large egg or 2 regular ones
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1/2 cup oats
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon or more to taste
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
Step-by-step instructions
- In a large bowl, mash the ripe bananas with a fork or potato masher until smooth.
- Add Greek yogurt, honey or maple syrup, melted coconut oil, egg, and vanilla extract to the mashed bananas. Mix well until the ingredients are combined and a smooth mixture is formed.
- In another bowl, mix whole wheat flour, oats, baking soda, baking powder, cinnamon, and salt. Optionally, add chopped nuts or chocolate chips to the dry mixture.
- Preheat the oven to 175 °C (350 °F). Grease the loaf tin with butter or line it with baking paper.
- Gradually add the dry ingredients to the wet mixture, mixing as you go. Once combined, avoid overmixing.
- Pour the prepared dough into the pan, spreading it evenly and leveling the surface as needed.
- Bake the banana bread for about 50 minutes or until a toothpick inserted in the center comes out clean. Check after 40 minutes and then every 10 minutes, as baking times may vary.
- Allow the baked banana bread to cool in the pan for 10 to 15 minutes, then transfer it to a wire rack to cool completely.
