- 2 pounds (about 900 g) beef chuck, cut into 1-inch cubes
- 2 large onions, finely chopped
- 3 cloves of garlic, minced
- 2 tablespoons Hungarian sweet paprika (you can also add hot paprika for extra heat)
- 1 teaspoon cumin
- 2 tablespoons tomato paste
- 4 cups beef broth
- 2 large potatoes, peeled and cut into 1-inch cubes
- 2 carrots, peeled and chopped
- 1 red pepper, diced
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Step-by-step instructions
- Pat dry the beef cubes and season with salt and pepper.
- Heat vegetable oil in a large pot over medium heat. Add onions and cook until soft, about 5 minutes. Add garlic and cook for another minute.
- Stir in Hungarian sweet paprika (and hot paprika, if using) and cumin. Cook for another minute to release flavors.
- Add beef cubes and sear on all sides, about 6 minutes.
- Add tomato paste and stir to coat beef and vegetables.
- Pour in beef broth, stir to combine, and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour, or until beef is tender.
- Add potatoes, carrots, and red pepper. Continue cooking, uncovered, for another 30 minutes, or until vegetables are tender and sauce has thickened slightly.
