You have many options for using spices and other ingredients to turn ‘ordinary’ chicken meat into a great dish that everyone likes. I hope to have a little garden in front of my house one day where I can go get fresh herbs and use them straight away in recipes that use herbs.

Recipe

Ingredients in this recipe

  • 4 boneless and skinless chicken breasts
  • 2 tablespoons of olive oil
  • 3 tablespoons of fresh lemon juice
  • 2 to 3 cloves of crushed garlic
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • Lemon slices for garnish
  • Fresh herbs for taste and decoration

Step-by-step instructions

Step 1

  • Pat the chicken breasts dry with paper towels. Place the chicken breasts in a bowl or a resealable plastic bag.

Step 2

  • In a small bowl, thoroughly mix olive oil, lemon juice, garlic, dried oregano, dried thyme, dried rosemary, salt, and pepper.

Step 3

  • Turn on and preheat the oven to 200 °C (400 °F).

Step 4

  • Pour the marinade over the chicken breasts, making sure the chicken is well coated with the marinade. You can marinate them for at least 30 minutes for more flavor, or marinate them overnight to maximize the potential of the marinade. But if you’re in a hurry, like me, you can continue straight away.

Step 5

  • Place the marinated chicken breasts in a baking tray or on a tray lined with baking paper. Bake in the preheated oven for about 25 minutes or until the internal temperature of the meat reaches about 74 °C (165°F) and the chicken is cooked through.

Step 6

  • Add lemon slices and fresh herbs to the baked chicken breast for more flavor and garnish. Before serving, let the chicken rest for a few minutes so that the meat is calm and not overheated.

Step 7

  • Serve this easy Lemon Herb Roasted Chicken Breast with your favorite side dishes such as sautéed vegetables, roasted potatoes or chips, rice, or a fresh vegetable salad. You can also serve it with fresh bread according to your taste.

I hope you enjoy this delicious and flavorful Oven Roasted Chicken Breast with Lemon and Herbs. Be sure not to be afraid of experiments and do not take the recipe too seriously. You can easily add more garlic, remove herbs or even add something spicy to create a combination of flavors and chicken exactly how you like it.
