Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a microwave-safe bowl, melt mozzarella and cream cheese together (about 1 minute). Stir until smooth.
In a separate bowl, whisk together almond flour and baking powder.
Add the dry ingredients and eggs to the melted cheese. Mix until a dough forms.
Divide dough into 6 equal portions. Shape each into a ring and place on the baking sheet.
Optional: Sprinkle with toppings of choice.
Bake for 15–20 minutes, or until golden brown.
Let cool slightly before serving.
