Ingredients
  

  • 2 ½ cups gluten-free all-purpose flour with xanthan gum
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 –2 tbsp milk as needed

Method
 

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, beat butter and sugar until light and fluffy.
  3. Add egg and vanilla; mix well.
  4. Gradually add dry ingredients. Add milk if dough feels dry.
  5. Chill dough for 30 minutes.
  6. Roll dough between parchment to ¼-inch thickness.
  7. Cut shapes with cookie cutters and place on lined baking sheet.
  8. Bake at 350°F (175°C) for 8–10 minutes or until edges are lightly golden.
  9. Cool completely before decorating.

Notes

  1. Chill dough for best texture.
  2. Store cookies in an airtight container up to 5 days or freeze for 1 month.
  3. Decorate with royal icing or a simple glaze.
